HOT CHICKEN for the "No Cooks" out there:

(this is for the fans of convenience)

Step 1   Go to your local grocery store that makes fried chicken.  Buy some.  Take it home. Reheat in oven if necessary.

HOT CHICKEN for the "Home Cooks"

this is for the "I love making or want to make fried chicken from scratch" group)

Step 1  Make your fried chicken.  If this isn't second nature for you, try this simple but reliable recipe:

This is going to be for one whole chicken broken down into pieces or the equivalent volume of tenders (approximately 12)

Brine your bird! It will be juicy and delicious. 

To brine, put your your chicken pieces in a gallon ziplock back, add 2 Tablespoons of salt, a sliced up a lemon and lime, fill bag with water (2-4 cups), remove air, seal and rest in the refrigerator for at least a few hours or ideally overnight.

Optional 2-3 eggs beaten 

2 cups self rising flour

A good bit of salt

A good bit of ground black pepper

Some garlic powder

Oil for frying

A lot of recipes would have you prepare a wash by beating some eggs that you'd dredge each piece through before then dredging through flower and repeating that process.  I find the moisture from the brine makes the wash step unnecessary.  So remove your chicken pieces from the brine and set them on a pan and pat dry.  Then season the chicken pieces.  Each piece should get a pinch of salt, pepper, and garlic powder.  Then dredge in flour you've already prepared in a bowl. Set aside to rest for a few minutes to let the first dredge hydrate on the bird.  Then give it a second dredge in the flour.

Heat your frying oil to 350 degrees F in a deep pot. You don't want to fill the pot more than 1/2 full with oil and you want enough oil for the chicken to be submerged while cooking.  So, use that criteria when picking a pot, unless you're deliberately wanting to do cast iron skillet fried chicken.

Fry your chicken in the oil until it's crispy and brown and or the internal temp of your pieces are 165 degrees F. Depending on how controlled your oil temp is, dark meat can take about 11 to 15 minutes, white meat closer to 10 minutes.

Grilled Hot Chicken

Coop's Nashville Hot Chicken Beer Cheese Dip

Ingredients:

1 1/2 lb fried chicken tenders, cooked

1 jar Coop's Hot Chicken Paste (you'll use 2-4 tbsp depending on desired heat)

16oz cream cheese, softened

1 cup Ranch dressing

16oz Velveeta, cubed

2 or more hoppy beers, preferably from a Nashville brewery

Coop's Hot Chicken Shake 

Dill Pickle Chips

1 loaf sliced white bread

Instructions:

1) Open first beer, start drinking it

2)  Melt Coop's Hot Chicken Paste and brush on fried chicken tenders (Medium - 2 tbsp, Hot - 3 tbsp, Extra Hot 4 tbsp)

3) Mix cream cheese, ranch dressing, cubed Velveeta processed cheese thoroughly

4) Open second beer and combine it with cheese mixture. If you already started drinking the second beer, good call.  Better finish it.  You can cook with a third beer.

4) Cut your Coop's coated tenders in to bite sized chunks.  Fight the urge to eat your delicious Hot Chicken during this step

5) Fold whatever chicken you didn't eat during Step 4 in to the cheese mixture and transfer your mix to a baking dish

6) Bake 20-30 minutes at 350 degrees, this is a good time to work on drinking that third or fourth beer you scrounged up

7) While your dip's baking in the oven, toast as much white bread as you think you and your group can handle.  Be careful not to burn your bread.  You have been drinking after all.  Once toasted, cut into strips or whatever shape you prefer for dipping and scooping.

8) Garnish dip with Coop's Hot Chicken Shake, Dill Pickle Chips and serve with toasted white bread pieces.
